LEMON PEPPER CHICKEN WINGS
@thedefineddish
Serves 2-4 (2 for dinner, 4 as an app)
--------------------------
o 2.5 lbs. Split Chicken Wings
o 2 tbsp. oil
o 6 cloves of garlic, minced
o zest of 1 lemon
o juice of 1 lemon
o 1 tsp. salt
o 1/2 tsp. pepper
o 1/4 tsp. cayenne
o 1/4 tsp. paprika
o 1 tbsp. ghee (we like to use @omgheebutter)
o freshly chopped parsley, for garnish
Method:
1. Rinse and pat dry the chicken wings.
2. In a large bowl, combine the wings with the oil, garlic, lemon zest, lemon, cayenne, paprika, salt and pepper. Toss until well combined. Let marinate at room temperature for at least 30 minutes, or cover and marinate in the fridge all day.
3. Preheat oven to 400 degrees. Wrap a cooking sheet in foil. Place a wire rack over the foil wrapped sheet. Spray wire rack with whole 30 approved cooking spray or grease with oil. Using tongs, evenly place the wings on top of the wire rack, reserving any remaining marinade in the bowl for later.
4. Place wings in the oven and bake for 35-40 minutes, or until the skins are crisp and browned.
5. Meanwhile, when your wings are about 10 minutes from being ready, heat the remaining marinade (there really isn’t much of this but every little bit helps) in a small skillet or saucepan over medium heat. Bring to a boil, then reduce heat down to low and add 1 tbsp. of ghee, whisking occasionally and making sure it does not burn, until the wings are done.
6. When wings are done, remove with a spatula and into a bowl. Pour the marinade/melted ghee mixture over the top and gently toss once more.

CHEWY GINGER MOLASSES COOKIES
PREP TIME: 15 MINS
COOK TIME: 10 MINS
TOTAL TIME: 25 MINS
INGREDIENTS:
- 1 ½ cups butter, softened to room temperature (not melted)
- 2 cups granulated sugar
- ½ cup molasses
- 2 eggs
- 4 cups all-purpose flour
- 4 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 teaspoon salt
DIRECTIONS:
Preheat oven to 375°F.
In a medium bowl, whisk together flour, soda, cinnamon, cloves, ginger and salt. Set aside.
In the bowl of an electric stand mixer, beat together butter and sugar on medium speed for 1 minute until light and fluffy. Add in the eggs and molasses, and beat on medium-low speed until combined. Gradually add in the dry ingredient mixture and beat until combined. Cover and refrigerate dough for at least 30 minutes, until it is chilled*.
Roll the dough into small balls, about 1-inch in diameter. Fill a small bowl with sugar, and roll each ball in the sugar until it is completely coated. Place on cookie sheet at least 1 inch apart, then bake for about 8-10 minutes, until the cookies begin to slightly crack on top. (They may crack more while cooling.) Remove from the oven and let cool for a minute or two. Then transfer to wire racks to cool completely.
Serve immediately or store in a sealed container for up to 1 week.
*It is essential that the dough be thoroughly chilled with this recipe before baking. Otherwise, the dough will be soft and difficult to form into balls, and the cookies will flatten out significantly while baking.
I actually recommend chilling the dough before rolling. And then after you have placed your dough balls on the cookie sheet, pop the entire cookie sheet with the dough in the refrigerator for an extra 10-15 minutes before baking.
