Almond and Cinnamon Granola
Total Time: 40 min
Prep 10 min
Cook 30 min
Yield: 10 cups
Level: Intermediate
Ingredients
4 cups old-fashioned rolled oats
2 cups sweetened, shredded coconut
2 cups sliced almonds
1 1/2 cups dried cherries, chopped (I used Craisens instead) any dried fruit would work.
1/2 cup vegetable oil
1/3 cup good honey
2 teaspoons ground cinnamon
Directions
Preheat the oven to 350 degrees F.
Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.
HELPFUL HINTS:
*Put parchment paper down before on the cookie sweet to eliminate clean-up. I cooked it at no higher then 325 degrees. After the first 10 minutes I stirred it and then I checked it every 5 minutes after that until the coconut id golden brown. The first time I made it it burned so watch it carefully!! Also I added the criasens at the end and did not bake them.
Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.

Makeover "real man quiche"
(from taste of home magazine) I haven't tried this, but I am going to soon!
1 pkg refrigerated pie pastry
8 bacon strips
2 large onions, chopped
8 egg whites
4 eggs
3 cups skim milk
3 cups shredded mozzarella cheese
1 pkg (10oz) frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped sun-dried tomatoes (not packed in oil)
2 TBS cornstarch
1 tsp dried basil
1/2 tsp pepper
1. On a lightly floured surface, unroll pastries. Transfer to two 9 inch pie plates. Trim pastry to 1/2 inch beyond edge of plate and flute edges.
2. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain skillet. In the same skillet cook and stir onions over medium heat until tender.
3. In a large bowl, whisk the egg whites, egg, milk, cheese, spinach, onions, tomatoes, cornstarch, basil and pepper. Divide between pastries. Sprinkle with bacon.
4. Bake at 375 for 35-40 min and let stand 10 min before cutting
(1 piece equals 248 calories and 13g protein)

1 cup whole wheat flour
2 TBS sugar
2 tsp baking powder
1 tsp baking soda
2 egg whites
1 egg
2 cups buttermilk
2 TBS oil
In a large bowl, combine the first 5 ingredients. Combine the egg whites, egg, buttermilk, and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles just form on top; cook until second side is brown. Serve with berries if desired.

Cinnamon Rolls
Combine & microwave for 3-4 minutes
1 stick butter
1 cup milk
Combine & set aside
1/2 cup warm water
2 packages yeast (5 tsp)
1 T sugar
In a large mixing bowl combine 1/2 cup sugar, 1 1/2 tsp salt, 1 cup warm water. Add the milk and melted butter. Then add 2 eggs and 2 cups flour. Add the yeast mixture. Add 4 cups flour. Mix until flour is absorbed. Knead for 5 minutes adding up to 3 more cups flour until the sides of the bowl are free of dough. The dough should be a light, smooth ball that can be handled easily. Remove the dough hook, cover the bowl, and let the dough rise until doubles in size.
Combine and melt in the microwave 1 stick butter, 1 cup brown sugar and 3 T cinnamon.
Punch down the dough.
On a floured surface roll the dough into a rectangle about 14" by 18" and less than a 1/2 inch thick.
Spread the cinnamon mixture evenly. (For smaller rolls- cut the rectangle in half the long way before rolling it up). Start on the long side roll up the dough, pinching the dough closed the whole length of the roll along the seam when you are done.
With a sharp knife, cut rolls about 1" thick and place them on greased cookie sheets. They should not be touching much. Cover and let them rise until doubled.
Bake at 350 degrees for 12-17 minutes. They should be light brown.
While the rolls are still warm, cover with icing.

Monkey Bread
This is a fun breakfast for holidays...
1/2 cup sugar
1 tsp cinnamon
2 cans (16.3oz each) homestyle biscuits
1 cup brown sugar
3/4 cup butter, melted
Heat oven to 350. Lightly grease 12 cup fluted tube cake pan. (I didn't have one so I halved the recipe and baked it in a bread pan.) In a large plastic bag, mix sugar & cinnamon. Separate dough and cut each into quarters. Shake in bag to coat. Arrange in pan. Mix brown sugar and melted butter. Pour over biscuit pieces. Bake 28-32 minutes or until golden brown and no longer doughy in the center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.

Oat Pancakes
Here is a good wheat free pancakes. They are so good! I like to add apple chunks or make a streusel topping.
- 3 cups old-fashioned oatmeal
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups buttermilk
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1/3 cup sugar (I always add a little bit more. . .)
Directions
- Grind the oats in a blender or food processor until fine. In a large bowl, combine ground oats, baking soda, baking powder, salt and cinnamon.
- In another bowl, combine buttermilk, milk, oil, egg, and sugar with an electric mixer until smooth. Mix wet ingredients into dry with a few swift strokes.
- Lightly oil a skillet or griddle, and preheat it to medium heat. Ladle 1/3 cup of the batter onto the hot skillet; cook the pancakes for 2 to 4 minutes per side, or until brown.

Mexican Brunch Pie (Quiche)
This is one of our favorite breakfasts at Aunt Dana's house! It is so tasty and would be a great breakfast to make for when you have guests.
Ingredients:
5 large eggs, beaten
2 TBS. butter, melted
1/4 cup flour
1/2 tsp. baking powder
1 cup cottage cheese
2 cups (8 oz.) shredded Monterey Jack cheese with peppers
1 4.5 oz. can chopped green chilis
Directions:
Beat eggs, melted butter, flour, and baking powder in a large mixing bowl; beat at medium speed until mixture is blended .
Stir in cottage cheese, Monterey Jack cheese, and chilis; pour into a well greased 9-inch pie pan.
Bake uncovered at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake 20 more minutes or until mixture is set. Cut into wedges. Yield: 6 servings

Chocolate Banana Bread
I'm not a fan of anything banana, but Ryan LOVES everything banana. So, I thought I'd give this recipe a try. It was a hit & the loaf didn't last very long! :) (I got the recipe from a blog that I read.)
Ingredients:
1 cup sugar
2 eggs
1/3 cup vegetable oil
1 1/4 cups mashed bananas (about 3)
1 tsp vanilla extract
1 1/2 cups flour
1/2 cup cocoa
1 tsp baking soda
1/2 tsp salt
1 cup semi sweet chocolate chips
1. Heat oven to 350. Spray bottom of 8x4 inch loaf pan with cooking spray.
2. Beat sugar, eggs, and oil in large bowl at medium speed until combined. Beat in banana and vanilla at low speed. Combine flour, cocoa, baking soda and salt in a medium bowl; beat into banana mixture at low speed just until combined. Stir in chocolate chips.
3 Spoon batter into pan. Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack.

Overnight French Toast
My mother-in-law gave me this recipe & it looks really yummy!
prep:5 minutes
Cook:15 minutes
Serve: 6
8 slices egg or raisin bread
6 eggs
1/3 cup sugar
2 cups eggnog or buttermilk
1 teaspoon grated nutmeg
1/2teaspoon cinnamon
2 tablespoons unsalted butter, melted and cooled
Maple syrup, as accompaniment
1. Arrange bread in single layer in a 13-X9-X2-inch baking pan.
2. In a medium bowl, whisk eggs until blended. Whisk in sugar, eggnog, nutmeg, cinnamon, and butter. Pour mixture over bread. Turn slices to coat. Cover with plastic wrap and refrigerate over night.
3. Preheat oven to 400`F. Bake 10 minutes. Turn bread over and bake until golden in color, 5 minutes. Serve with maple syrup.

Mimi's Cafe Spice Muffins

This is supposed to be the recipe from Mimi's Cafe for their buttermilk spice muffins. They have the best muffins & I was excited to get my hands on this recipe. I made them this weekend & they were a big hit and tasted just like the muffins that I remember.
Ingredients:
1 cup sugar
1/2 butter, softened
3 eggs
2 1/2 cups flour
2 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
3/4 cup + 1 Tbs. buttermilk
Sugar Topping:
1/2 cup sugar
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 cup chopped walnuts (optional)
Directions:
Preheat oven to 375 degrees. In a mixing bowl, cream the sugar and butter together with an electric mixer. When they are thoroughly mixed, add eggs and beat one more minute. Sift the flour into a separate bowl, together with the baking soda, nutmeg, and cinnamon. Add the flour and the buttermilk to the first mixture, mix at low speed until smooth. To avoid lumps in the batter, add the wet & dry ingredients alternately, in small amounts.
Mix ingredients for sugar topping in a small bowl. Put baking cups in muffin pan & fill each cup 3/4 full of batter. Add a full rounded tablespoon of the sugar topping on top of the batter in each cup. Bake immediately, or the topping will sink to the bottom of the muffin. Bake for 20-25 minutes.
Recipe yields 12 standard size muffins, or 6 jumbo muffins. If using the jumbo muffin pans, reduce the oven temperature by 25 degrees and increase the baking time by 5-10 minutes.

Cinnamon Rolls
Serves:20
Ingredients:
2 cups milk scalded
2/3 cups shortening
2/3 cup sugar
1 tablespoon salt
2 tablespoon yeast
1/2 cup warm water
3 large eggs
8 cups flour
1 stick butter melted
brown sugar
cinnamon
nuts (optional)
Icing:
3 tablespoons butter
2 cups powder sugar
2 tablespoons milk
Directions:
Dissolve yeast in 1/2 cup warm water with 1 tablespoon of sugar. Set aside. Put milk in small sauce pan and heat just until steam rises (this is scalded milk). Take off heat and add 2/3 cup shortening and 2/3 cup sugar. Beat egg in large mixing bowl and then add cooled milk mixture. Mix in two cups flour and salt. Add yeast that has been rising. Mix well. Then add the rest of the flour to make a soft dough. Let dough rest for ten minutes and then knead for about ten minutes. Let rise until double in bulk. Divide dough in half. Roll out dough approx 1/2 inch thick in large rectangle shape. Spread melted butter on top, sprinkle with brown sugar and then cinnamon. Roll up like jelly roll. Cut into 1 inch cinnamon rolls. Put onto greased cookie sheet and let rise for about an hour. Do the same with the other half of the dough. Bake in 350 degree oven for approximately 15 minutes or until just lightly brown (do not overcook). Mix the icing ingredients together and ice hot rolls.
