Best Pecan Yams

 Yams
  4 cups cooked and mashed yams                          Topping
1 cup sugar                                                            1 cup brown sugar
1/2 cup butter, melted                                              1/3 cup flour
 2 eggs                                                                   1/3 cup butter, melted 
 1 tsp vanilla                                                             1 cup chopped pecan

                      
Combine yams, sugar, 1/2 cup melted butter eggs, and vanilla.  Mix well and turn into 9 X 13 glass dish.  Combine brown sugar and flour and mix well. Stir in 1/3 cup melted butter and nuts.  crumble over the top.   Bake 30 - 45 minutes at 350 degrees or until set.

Cilantro Lime Sweet Potatoe Wedges

These are a favorite in my house. A friend had us over for dinner & made these sweet potatoe wedges to go along with burgers. They were so good!

All you do is boil the sweet potatoes until they are tender. Then cut them into wedges. Heat a little olive oil in a pan and sautee the sweet potatoes. In a little bowl combine a little salt, lime zest, and garlic powder.... just like a tablespoons worth all together. Then sprinkle a little bit of the mixture onto the sweet potatoes. Continue to sautee and put chopped cilantro on top. Sautee another minute until done.

Chili & Lime BBQ Corn


This was a big hit at our 4th of July party!!! Very tasty....

(We did 10 pieces of corn, 5 chili and 5 lime and it worked out great.)
1. Make the butter mixture:
Lime Corn
1/3 cup room temperature butter
1 tbs. lime zest
1 tbs. lime juice

Chili Corn
1/3 cup room temperature butter
2 tbs. chili powder
1 tsp. cumin seed

2. Pull back husk, but keep it attached
3. Remove silk
4. Replace husk
5. Soak in cold water for 20 minutes
6. Pull back husk, spread butter mixture on corn, put back husk
7. Grill 15 minutes until browned and tender

Breadsticks


When Brooke was here, she & Ryan made these Breadsticks. They taste just like Little Ceasar's crazy bread. They were so yummy that we made them 2 days in a row. (I got this recipe from a blog that I read.)

Ingredients:

1 T yeast
1 1/2 cups warm water
2 T sugar
1/2 t. salt
3 c. flour
1/2 c. butter/margarine

1. Dissolve yeast in 1 and 1/2 c. warm water (about 5 minutes).

2. Mix all ingredients together, slowly adding flour last; knead until smooth and elastic. Let rise 10 minutes.

3. Melt 1/4 cup butter (or just eye ball the amount) and pour into 2 cookie sheets (or I used a 9x13 Pyrex pan).

4. Roll out dough into a rectangle, about the same size as the pan. Cut into 1 x 4 inch strips, using a pizza cutter. Roll each piece in melted butter and place in the jelly roll pans.

5. Sprinkle with Parmesan cheese and garlic powder. Let rise 15-20 minutes. Bake at 350 for 18-22 minutes.
