Monkey Bread


This is a fun breakfast for holidays...

1/2 cup sugar
1 tsp cinnamon
2 cans (16.3oz each) homestyle biscuits
1 cup brown sugar
3/4 cup butter, melted

Heat oven to 350. Lightly grease 12 cup fluted tube cake pan. (I didn't have one so I halved the recipe and baked it in a bread pan.) In a large plastic bag, mix sugar & cinnamon. Separate dough and cut each into quarters. Shake in bag to coat. Arrange in pan. Mix brown sugar and melted butter. Pour over biscuit pieces. Bake 28-32 minutes or until golden brown and no longer doughy in the center. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.

Barefoot Contessa's Lasagna

Auntie Sue shared this recipe with me. The lasagna is delicious and super flavorful. You just need a small piece because of all the yummy different flavors from the different cheeses is very satisfying. Invite some friends over and cook this for dinner, my 19 month old had seconds and didn't leave a crumb to spare on his plate!!!

Ingredients:
2 TBS olive oil
1 cup chopped yellow onion
2 garlic cloves, minced
1.5 lbs lean sweet Italian turkey sausage, casing removed
28 oz. crushed tomatoes
6 oz. tomato paste
1/4 cup chopped fresh flat-leaf parsley
1/2 cup chopped fresh basil leaves
2 tsp. kosher salt
3/4 tsp. freshly ground pepper
1/2 pound of lasagna noodles
3 oz. goat cheese, crumbled
1 cup grated Parmesan, plus 1/4 cup for sprinkling
1 egg, lightly beaten
1 lb. fresh mozzarella, thinly sliced (I used grated mozz)

Directions:
Preheat oven to 400 degrees.

Heat the olive oil in large skillet. Add the onion and cook for 5 minutes over med-low heat, until translucent. Add the garlic and cook for 1 more minute. Add the sausage and cook over med-low heat, breaking it up with a fork, for 8-10 min, or until no longer pink. Add the tomatoes, tomato paste, 2 TBS of parsley, basil, 1.5 tsp salt, 1/2 tsp pepper. Simmer, uncovered, over medium-low heat for 15-20 min.

Meanwhile, fill a large bowl with the hottest tap water. Add the noodles and allow them to sit in the water for 20 minutes. Drain.

In a medium bowl, combine the ricotta, goat cheese, 1 cup of Parmesan, egg, 2 TBS of parsley, 1/2 tsp salt, 1/4 tsp pepper. Set aside.

Ladle 1/3 of sauce into 9x13 baking dish, spreading the sauce over the bottom of dish. Then add the layers as follows: half the pasta, half the mozzarella, half the ricotta, and one 1/3 of sauce. Add the rest of pasta, mozz, ricotta, and finally, sauce. Sprinkle with 1/4 cup of Parmesan. Bake for 30 minutes, until the sauce is bubbling.
