Cookies N Cream Ice Cream

(I used fat free on everything to make it a little healthier...)

2 cups milk
1 3/4 cup sugar
1?2 tsp. salt
2 cups half & half
1 tablespoon vanilla
4 cups whipping cream
24 oreos

Scald milk until bubbles form around edge of pan. Remove from heat. Add sugar & salt. Stir until dissolved. Stir in half & half, vanilla, & whipping cream. Cover & refrigerate 30 minutes. Pour mixture into ice cream canister and follow directions on maker. Add crushed oreos after 30 minutes.

Bread Machine Recipe

Ingredients

  • 1 cup warm water (110 degrees F/45 degrees C)
  • 2 tablespoons white sugar
  • 1 (.25 ounce) package bread machine yeast
  • 1/4 cup vegetable oil
  • 3 cups bread flour
  • 1 teaspoon salt

Directions

  1. Place the water, sugar and yeast in the pan of the bread machine. Let the yeast dissolve and foam for 10 minutes. Add the oil, flour and salt to the yeast. Select Basic or White Bread setting, and press Start.

Pesto Chicken Panini


We went to Bruegger's bagel shop a couple weeks ago for lunch & I ordered a pesto chicken sandwich and it was so tasty & looked so easy to make. So I gave it a try & it turned out exactly the same & so delicious. I bought Asiago Parmesan bagels from the store.

Ingredients:
pesto
chicken breast
provolone cheese
asiago parmesan bagel

Directions: (to make 2 sandwiches)
Cut chicken breast in half length wise so it is half as thick. Next I cooked it on our George Foreman grill for a couple minutes. Meanwhile spread pesto on bagel and put provolone cheese on 1 side of bagel. Once chicken is done put it ontop of the cheese & then close up sandwich. Warm up panini press and grill sandwich.

Pesto


Ingredients:

2 cloves garlic; crushed
2 cups, packed, coarsely chopped basil leaves
Coarse salt
1/4 tablespoon pine nuts
3 tablespoons Parmesan cheese
1/2 to 1/3 cup olive oil

Directions:

In a food processor, pound the garlic, basil, pinch salt, pine nuts and cheese into a paste. Gradually blend in olive oil; adjust seasoning.

Cilantro Lime Sweet Potatoe Wedges

These are a favorite in my house. A friend had us over for dinner & made these sweet potatoe wedges to go along with burgers. They were so good!

All you do is boil the sweet potatoes until they are tender. Then cut them into wedges. Heat a little olive oil in a pan and sautee the sweet potatoes. In a little bowl combine a little salt, lime zest, and garlic powder.... just like a tablespoons worth all together. Then sprinkle a little bit of the mixture onto the sweet potatoes. Continue to sautee and put chopped cilantro on top. Sautee another minute until done.
