Here is a good wheat free pancakes. They are so good! I like to add apple chunks or make a streusel topping.
3 cups old-fashioned oatmeal
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups buttermilk
1 cup milk
1/4 cup vegetable oil
1 egg
1/3 cup sugar (I always add a little bit more. . .)
I make my own buttermilk with milk and about a tablespoon of vinegar or lemon juice. I also substitute the oil for cinnamon applesauce and add about a tablespoon of olive oil instead.
Directions
Grind the oats in a blender or food processor until fine. In a large bowl, combine ground oats, baking soda, baking powder, salt and cinnamon.
In another bowl, combine buttermilk, milk, oil, egg, and sugar with an electric mixer until smooth. Mix wet ingredients into dry with a few swift strokes.
Lightly oil a skillet or griddle, and preheat it to medium heat. Ladle 1/3 cup of the batter onto the hot skillet; cook the pancakes for 2 to 4 minutes per side, or until brown.
* 2 cups Soy Sauce * 2 cups sugar * 1 20oz can of pineapple chunks (juice--save chunks for later) * 6lbs chicken thighs (without skins)
Directions
1. Mix the soy sauce, sugar, & pineapple juice in a pot 2. Put in chicken, heat to a boil. 3. Cover & reduce to a simmer, stirring occasionally 4. Takes about 40-45 minutes or until chicken is cooked--do not overcook, just make sure the chicken isn't falling apart 5. Add pineapple chunks.
**You can add more sauce according to taste--it's 1 part soy sauce to 1 part sugar
Pani Popo: (Sweet Coconut buns): Ingredients
* 1 (12 ounce) package frozen dinner rolls, thawed * 1 (10 ounce) can coconut milk * 3 tablespoons sweetened condensed milk * 3/4 cup white sugar, or to taste -- if you like it less sweet, like I do, just reduce the sugar to 1/3 to 1/2 cup
Directions
1. Coat a 9x13 inch baking dish with cooking spray. Coat your hands with cooking spray or shortening, and roll the dough balls in your hands so that they have a light coating. Place in the prepared dish. Set aside in a warm place to rise until doubled, up to 2 hours. 2. Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, stir together the coconut milk, sweetened condensed milk and sugar. Pour this mixture over the top of the rolls as evenly as you can. 3. Bake for 30 minutes in the preheated oven, until golden brown. Let cool for a few minutes before separating and serving.
